Guacamole
with Pico de Gallo Salsa and Totopos

Step 1
In a mortar and pestle, crush the garlic with a pinch of salt.
Step 2
Add the avocado roughly mash leaving some bits chunky.
Step 3
Fold in the onion, jalapeno, lime juice and zest and coriander.
Step 4
Check season it may need a little extra salt.
Step 5
For the pico de gallo, combine all the ingredients together and season with salt.
Step 6
Serve the guacamole and pico de gallo with generous bowl of totopos.
