Add the butter to a pan and allow to melt then pour in the eggs and sprinkle with chives. Let set for a few seconds, then bring the sides to the centre and swirl the pan to scramble the eggs.
Add knobs of cheese and fold in with spatula. Once just set and fluffy, remove from the pan.
Arrange salmon in one layer over each tortilla. Add cheesy eggs and roll into a burrito. Lightly toast on each side.
