Feliz Día del Taco 🌮🎉 We’re honouring Mexico’s official taco celebrations with an all-time classic: Al Pastor Tacos.
A mouthwatering combo of juicy pork and sweet pineapple, wrapped in warm corn or flour tortilla! Recipe in comments 👇
All tacos are worth celebrating, but this one is something truly special 🙌
What you’ll need:
12 x La Banderita Taquito corn tortillas or flour Street Tacos
2kg piece of pork scotch (neck), placed in freezer for 1 hour to firm up
1/2 bunch of coriander, roots and stems roughly chopped
4 cloves garlic, chopped
1 small ripe pineapple (about 1kg), peeled
2 tbs. of chopped chipotle chilli in adobo (including sauce)
1 tbs. ground coriander
1 tbs. sweet smoked paprika
1 tbs. white vinegar
1 tbs. olive oil
1 white onion, finely chopped

In case you missed it, we`ve launched our new 🌽 CORN TORTILLAS 🌽 To celebrate, you just know we have a whole new line up of recipes on their way, but had to kick things off with these Airfryer Pork Belly Tacos 🌮🙌
Recipe below 👇
What you’ll need:
1 pack of La Banderita Taquito corn tortillas 🌽
1kg pork belly, skin scored
1 jalapeno, thinly sliced
1 avocado, sliced
Salt
Tomato Salsa
2 ripe tomatoes, quartered and seedy flesh removed
1 small bunch of coriander, 1/2 finely chopped the rest picked for garnish
1 clove garlic, minced
½ small Spanish onion, finely diced
Zests and juice of a lime
Pinch chilli flakes
2 tbs extra virgin olive oil, plus an extra splash for the pork
Salt and pepper
Method:
Pat the pork dry with paper towel and place in the fridge uncovered to air dry overnight.
Bring pork out of the fridge 1 hour before cooking. Set the air fryer to 200°C. Rub a splash of oil over the pork and season generously with salt. Place in the air fryer basket and cook for 25 - 30 minutes. Once the crackling is crisp. Reduce the heat to 160°C and cook for a further 25 - 30 minutes. Rest pork for 10-15 minutes.
Combine salsa ingredients together in a bowl.
In another bowl, toss jalapenos with remaining coriander leaves.
Heat the tacos in a pan over a medium heat for a minute on each side. Keep warm by placing in a clean tea towel.
To serve, add a slice of avocado to each warm taco, top with pork belly, crackling, and tomato salsa. Garnish with jalapenos and coriander, and enjoy!

🌮 What you’ll need
Mango Salsa:
2 avocados (cubed)
1 mango (cubed)
3 sprigs coriander, chopped
Juice + zest 1 lime
Salt + pepper
Everything else:
1kg cooked Australian tiger prawns (peeled)
8 La Banderita Street Tacos
Mayo
Chilli sauce
Crispy fried shallots
Method:
1️⃣ Gently toss salsa ingredients together
2️⃣ Warm tacos in a dry pan (~1 min each side)
3️⃣ Spread tacos with mayo, then add salsa and a couple of prawns
4️⃣ Top them with chilli sauce, crispy shallots and an extra squeeze of lime for that fresh Mexican finish!
