12 x La Banderita Taquito corn tortillas or flour Street Tacos⁠
2kg piece of pork scotch (neck), placed in freezer for 1 hour to firm up⁠
1/2 bunch of coriander, roots and stems roughly chopped⁠
4 cloves garlic, chopped⁠
1 small ripe pineapple (about 1kg), peeled⁠
2 tbs. of chopped chipotle chilli in adobo (including sauce)⁠
1 tbs. ground coriander⁠
1 tbs. sweet smoked paprika⁠
1 tbs. white vinegar⁠
1 tbs. olive oil⁠
1 white onion, finely chopped⁠

🌮 What you’ll need⁠
Mango Salsa:⁠
2 avocados (cubed)⁠
1 mango (cubed)⁠
3 sprigs coriander, chopped⁠
Juice + zest 1 lime⁠
Salt + pepper⁠
⁠
Everything else:⁠
1kg cooked Australian tiger prawns (peeled)⁠
8 La Banderita Street Tacos⁠
Mayo ⁠
Chilli sauce⁠
Crispy fried shallots⁠
⁠
Method:⁠
1️⃣ Gently toss salsa ingredients together⁠
2️⃣ Warm tacos in a dry pan (~1 min each side)⁠
3️⃣ Spread tacos with mayo, then add salsa and a couple of prawns⁠
4️⃣ Top them with chilli sauce, crispy shallots and an extra squeeze of lime for that fresh Mexican finish!⁠
