Tortilla Sausage Rolls

  • 4 La Banderita burrito grande
  • 1 tsp poppy seeds
  • Tomato sauce, to serve

Filling

  • 500g pork mince
  • 1/2 carrot, grated
  • 1/2 onion, finely diced
  • 1 egg plus an extra egg reserved for the egg wash
  • 2 tbsp good quality-store bought bbq sauce or tomato sauce
  • 1/2 tsp fennel seeds
  • 1 cup freshly grated cheddar cheese
  • Salt and pepper
  • Preheat the oven to 170°C.
  • Mix the filling ingredients together in a bowl with a pinch of salt and pepper.
  • Lay tortillas on a flat surface. Divide the filling into 4 even portions and shape into a log on to each tortilla. Roll tortillas over the meat filling to form a sausage roll. Brush egg wash over the sausage rolls and sprinkle with poppy seeds.
  • Trim ends and then cut in half (or in 4 for bite-size sausage rolls). Place on a tray, seam side down. Bake in the oven for 30-35 minutes. or until gold brown.
  • Serve with tomato sauce.
